Preheat oven to 350° F

1 cup quick cooking oatmeal

1 cup flour (oat or wheat)

1 cup shredded carrot (about 1 large carrot)

1 tablespoon sugar

Mix above ingredients together in a medium sized bowl. Then combine with:

2 tablespoons oil (corn or vegetable)

¼ cup molasses

Using a melon scoop or oiled spoon, drop dough (which will be quite sticky) onto parchment lined cookie sheet.  Leave these as balls or flatten (your preference).

Bake for 20-25 minutes

Makes approximately 15 cookies
